Jan's Red Blood Plum Jam!

What can I say?  We are finally re-stocked with one of our favorite fruit jams, thanks to this Autumn's harvest at Stahl Orchards in Paonia, CO, and thanks to our visit there with Jan's Dad, Joe Eagers, in early September.  We've been out of this treasure for almost a year!

Because of Jan's travel schedule, we froze all the plums whole, until the weekend before Thanksgiving, when she was home with enough time to work on this project.  We got it done on Sunday, November 21.

The Sure-Jell low-sugar pectin we used (pink box) cautions us not to reduce the sugar any more than they already recommend (half of normal pectin), but we cut the sugar in half again anyway, and it jelled up just right!  Easy on the sugar, no problem!
